With "Spontinase" we mean th...Hi Kerry, <br /><br />With "Spontinase" we mean the typical bouquet of a spontaneous fermentation. This sort of fermentation often brings more complexity in to the wine, because wild yeast (up to approx. ten different) are also working at the beginning of the fermentation and not only one industrial yeast. The wild yeasts can only live in enviroment containing less than 4 to 6 vol. alc. When this level is reached a yeast of the family Sacaromyces will take over and complete the fermentation. Wines made this way is, however not automatically better than wines fermented with an industrial yeast.<br /><br />With 360 wines to taste it is difficult to make a long in-depth tasting note for every wine. Thats the reason for the very compact way of writing.
